Oat and Raisin Cookies

Makes around 12 small cookies.


  • 1 cup (100g) rolled oats
  • 1/3 cup (60g) golden or regular raisins
  • 2/3 cup (60g) shredded coconut
  • 4 scoops (120g) Vanilla Huel
  • 1½ tsp cinnamon
  • 2 tsp baking powder
  • Pinch of salt
  • ½ cup (100g) of melted coconut oil (cooled down)
  • 1 tsp vanilla extract
  • 1/3 cup (100g) maple syrup (or honey if you’re not vegan)
  • 1/3 cup (80ml) of almond milk (add more if the batter is too dry)


  • Preheat the oven to 360°F.
  • Line a baking sheet with parchment paper.
  • In a big bowl, mix all the dry ingredients together. In a separate bowl, mix the wet ingredients well.
  • Slowly pour the wet mixture into the dry mixture, stirring to form a dough.
  • Roll the dough into cookie-shaped pieces and place on the baking sheet.
  • Bake in the oven for around 12 minutes.
