5 Easy Breakfasts for Chilly Fall Mornings

When mornings turn chilly, a good breakfast can make getting out of bed a little easier. Here are five ideas, from warm bowls to make-ahead options for busy days.

Apple, Cinnamon & Walnut Oatmeal

A warm bowl of oatmeal is an easy choice for a chilly morning. Oats provide fiber, protein, and minerals such as magnesium and phosphorus. Their fiber can help support regular bowel movements.

For my favorite fall combination, cook oats with your milk of choice. Stir in a pinch of cinnamon and chopped or stewed apple, then top with a small handful of walnuts for crunch.

Banana, Cinnamon & Peanut Butter Overnight Oats

Prepare breakfast the night before for an easier morning.

Mix oats, plant-based milk, a spoonful of plant-based yogurt, and mashed banana in a clean, reusable jar. Cover and refrigerate overnight. In the morning, add peanut butter, cinnamon, and a sprinkle of seeds if you like. Enjoy cold, or transfer to a microwave-safe bowl and warm through.

Yogurt Bowl with Warm Berries & Seeds

Yogurt bowls are easy to customize with whatever’s in the fridge. Plain Greek yogurt provides a protein-rich base. If you prefer plant-based yogurt, compare labels: protein content varies between alternatives.

Warm a handful of frozen berries until softened, then spoon over the yogurt. Add seeds, a small handful of nuts, or granola with less added sugar. Finish with a drizzle of nut butter if you like.

Scrambled Tofu & Mushroom Toast

When you have a little more time, try this savory option. Tofu is made from soybeans, a complete protein containing all nine essential amino acids.

Cook a handful of sliced mushrooms in a little oil over medium heat until soft. Add a minced garlic clove and cook briefly. Crumble in half a block of drained firm tofu, then season with turmeric, nutritional yeast, salt, and pepper. Stir until heated through and serve on a slice of whole-wheat toast.
